what do you call those parts that connect one stake side to another?
Are they remade or are there workable equivalents available?

carnut14,
I ordered a set (in 200?) from the below company. The connections are similar to original and they can be reshaped to match originals (like the drawing shown). I have seen these connections in a local hardware store (I think about $5 each).

Kois Brothers Equipment Co.,5200 Colorado Blvd., Commerce City, CO 80022, 303-298-7370, http://www.koisbrothers.com, e-mail - koisbros@ koisbrothers.com
Stake Rack Connections (as of 12/07 - left hand B-2585L $1.63, right hand B-2585R $1.63, left corner B-2591L $1.75, right corner B-2591R $1.75)

Using an original stake connector plate as a pettern, I made the rest of the ones that I was missing. They came out perfect and my costs were next to nothing.

I notice the restored trucks seem to have these parts painted. do they get all scraped up?

The stake racks were completely assembled and then painted body color originally.
