Don,
I don't know of any documentation on how to rebuild AA chassis parts. However, the AA is very similar with regard to the brake system. The book "Model A Ford Mechanics Handbook" could be used as a starter to learn about the A brake system rebuild. That knowledge could then be applied to the AA.
