Top prop knob and windsheild knob

Both the top prop knob and windsheild knob come chrome plated for the 29 roadster cab.

were they gloss black originally?

You likely mean the open cab. Ford never produced a roadster cab. Roadster Pickups were a home made vehicle (see attached). Page 9-4 of the RGJS says Top Prop knobs on standard models were painted black (I assume gloss black). Post a picture of the "windshield knob" you reference.
